Pumpkin Pie
Ingredients for the Pie Filling
1 3/4 cups (about 15 ounces) pumpkin purée (canned or homemade)
3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 1/4 cups evaporated milk (or half-and-half)
1 pie crust (store-bought or homemade)
Ingredients for the Pie Crust
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cubed
3 – 4 tablespoons ice water
Instructions for the Pie Crust
In a large mixing bowl, combine the flour and salt.
Add the cold, cubed butter to the bowl. Use a pastry cutter, fork, or your hands to work the butter into the flour until it resembles coarse crumbs.
Gradually add the ice water, one tablespoon at a time, and mix until the dough just comes together.
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat your oven to 425°F (220°C)
Instructions for the Pie Filling
In a large mixing bowl, combine the pumpkin purée, sugar, salt, and spices (cinnamon, ginger, cloves).
In a separate bowl, beat the eggs and then add them to the pumpkin mixture. Mix until well combined.
Gradually add the evaporated milk and mix until the filling is smooth.
Assembling the Pie
Roll out the chilled pie dough on a floured surface to fit your pie pan. Carefully transfer the dough to the pie pan, pressing it into the bottom and up the sides.
Trim any excess dough and create a decorative edge by crimping the edges with your fingers or a fork.
Pour the pumpkin filling into the pie crust.
Baking
Place the pie on a baking sheet (to catch any potential spills) and put it in the preheated oven.
Bake at 425°F (220°C) for 15 minutes.
Reduce the oven temperature to 350°F (175°C) and continue baking for 40 – 50 minutes, or until a knife inserted into the center of the pie comes out clean.
Allow the pie to cool on a wire rack before serving.
You can also serve your pumpkin pie with whipped cream or a scoop of vanilla ice cream for added deliciousness. Enjoy your homemade pumpkin pie!
